Making granola at home is simple, affordable, and lets you customize flavors while keeping the sugar in check. Store-bought granolas are often loaded with added sugars, but this version combines seasonal spices, molasses, and just a touch of maple syrup for a naturally sweet, festive flavor. Plus, with the addition of collagen powder, it’s packed with protein for an extra nutritional boost!

Gingerbread Winter Granola

Ingredients
- 3 cups rolled oats, organic preferred
- 1 cup pecans, roughly chopped
- 1 cup almonds, roughly chopped
- 1/2 cup pumpkin seeds
- 1/4 cup hemp seeds
- 1/3 cup maple syrup
- 1/4 cup melted coconut oil
- 1/4 cup molasses
- 1 tsp vanilla extract
- 2 tsp ground cinnamon
- 1 tsp ground ginger
- 1/4 tsp ground cloves
- 1/4 tsp salt
- 2 scoops collagen powder, plain (optional)
- 1/2 cup dried cranberries, raisins, or dried cherries, no added sugar
Instructions
- Preheat the oven to 325°F (160°C) and line a baking sheet with parchment paper.
- 2. In a large bowl, combine the rolled oats, pecans, almonds, pumpkin seeds and hemp seeds.
- 3. Whisk in a separate bowl the maple syrup, coconut oil, molasses, vanilla, cinnamon, ginger, cloves, salt and collagen powder.
- 4. Pour the wet mixture into the dry ingredients and stir until everything is coated well.
- 5. Spread the mixture evenly on prepared baking sheet
- 6. Bake for 25-30 minutes, stirring halfway through, until golden brown.
- 7. Remove from the oven, let it cool completely before adding the dried fruit, then store in an airtight container.
