Ingredients

Gingerbread Winter Granola
  • 3 cups rolled oats, organic preferred
  • 1 cup pecans, roughly chopped
  • 1 cup almonds, roughly chopped
  • 1/2 cup pumpkin seeds
  • 1/4 cup hemp seeds
  • 1/3 cup maple syrup
  • 1/4 cup melted coconut oil
  • 1/4 cup molasses
  • 1 tsp vanilla extract
  • 2 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1/4 tsp salt
  • 2 scoops collagen powder, plain (optional)
  • 1/2 cup dried cranberries, raisins, or dried cherries, no added sugar

Instructions

  1. Preheat the oven to 325°F (160°C) and line a baking sheet with parchment paper.
  2. 2. In a large bowl, combine the rolled oats, pecans, almonds, pumpkin seeds and hemp seeds.
  3. 3. Whisk in a separate bowl the maple syrup, coconut oil, molasses, vanilla, cinnamon, ginger, cloves, salt and collagen powder.
  4. 4. Pour the wet mixture into the dry ingredients and stir until everything is coated well.
  5. 5. Spread the mixture evenly on prepared baking sheet
  6. 6. Bake for 25-30 minutes, stirring halfway through, until golden brown.
  7. 7. Remove from the oven, let it cool completely before adding the dried fruit, then store in an airtight container.
