Whip up this savory breakfast meal prep featuring golden hash browns, fluffy scrambled eggs, hearty turkey sausage, vibrant peppers, and a fresh sprinkle of microgreens—a delicious, grab-and-go start to your day!
Ingredients
- 5 containers, glass preferred
- 3 1/2 cups cooked shredded potatoes, (good brands simply potato, Mr Dell's)
- 150 g bell peppers, diced
- 5 tablespoons real bacon bits
- 16 ounces ground turkey
- 2 tbsp salt free Italian seasoning
- 2 cups liquid egg whites
- Spring mix and Micro greens, *optional
Instructions
- Start by cooking the turkey sausage. Once done, drain any excess fat and set it aside.
- Grab five meal prep containers and divide the hash browns, bell peppers, bacon bits, and turkey sausage evenly among them.
- Lightly scramble your eggs and add them on top of the ingredients in each container.
- Sprinkle a little salt and pepper, then finish with a small handful of fresh micro-greens or spring mix for a pop of flavor and color.
- Seal the containers and store them in the fridge to have breakfast ready for the week (good for 5-6 days in fridge).
- When you’re ready to eat, simply pop a bowl in the microwave for 2-3 minutes, and enjoy!
- If you want to freeze, or don't finish in 1 week, freeze in freezer safe containers for up to 3 months!
